- 1 cup salted cod
- 1 cup all-purpose flour
- 1/2 cup water
- 1 small onion, diced
- 2 green onions, sliced
- 1 teaspoon black pepper
- 1 teaspoon baking powder
- 1/2 teaspoon thyme
- Oil for frying
Instructions
- Soak the salted cod in water overnight to remove excess salt.
- Drain and flake the cod.
- In a bowl, mix the flour, water, onion, green onions, black pepper, baking powder, and thyme.
- Add the flaked cod to the mixture and stir until well combined.
- Heat oil in a frying pan over medium heat.
- Scoop tablespoons of the mixture and fry until golden brown on both sides.
- Remove and drain on paper towels.
Notes
- For extra flavor, you can add diced bell peppers to the mixture.
