- 2 large sweet potatoes
- 1 can black beans, drained and rinsed
- 1 cup breadcrumbs
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil (for cooking)
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and chop the sweet potatoes, then boil until tender.
- In a large bowl, mash the sweet potatoes and add in the black beans, breadcrumbs, onion, garlic, and spices.
- Mix until well combined and form into patties.
- Heat olive oil in a skillet and cook each patty until golden brown on both sides.
- Transfer patties to a baking sheet and bake for 10 minutes.
