Ingredients

  • 2 large sweet potatoes
  • 1 can black beans, drained and rinsed
  • 1 cup breadcrumbs
  • 1 onion, finely chopped
  • 2 cloves garlic, minced

  • 1 teaspoon paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil (for cooking)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and chop the sweet potatoes, then boil until tender.
  3. In a large bowl, mash the sweet potatoes and add in the black beans, breadcrumbs, onion, garlic, and spices.
  4. Mix until well combined and form into patties.
  5. Heat olive oil in a skillet and cook each patty until golden brown on both sides.
  6. Transfer patties to a baking sheet and bake for 10 minutes.
