- 2 cups white beans, soaked overnight
- 4 slices turkey bacon, diced
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt to taste
- Pepper to taste
Instructions
- In a large pot, cook the diced turkey bacon over medium heat until crispy. Remove and set aside.
- In the same pot, add chopped onion and cook until translucent.
- Add minced garlic and cook for an additional minute.
- Stir in the soaked beans, vegetable broth, thyme, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for about 1 hour, or until beans are tender.
- Remove bay leaf and blend part of the soup for a creamy texture, then return it to the pot.
- Stir in the crispy turkey bacon and serve hot.
Notes
- For a spicier version, add a pinch of red pepper flakes.
- This soup can be blended for a smoother texture.
