  • 2 cups white beans, soaked overnight
  • 4 slices turkey bacon, diced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook the diced turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add chopped onion and cook until translucent.
  3. Add minced garlic and cook for an additional minute.
  4. Stir in the soaked beans, vegetable broth, thyme, bay leaf, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for about 1 hour, or until beans are tender.
  6. Remove bay leaf and blend part of the soup for a creamy texture, then return it to the pot.
  7. Stir in the crispy turkey bacon and serve hot.

Notes

  • For a spicier version, add a pinch of red pepper flakes.
