Ingredients

- 2 cups cooked white beans
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 4 cups vegetable broth
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 1/2 teaspoon black pepper
- 2 cups kale, chopped
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and sauté until translucent.
- Stir in the minced garlic and sliced mushrooms, cooking until the mushrooms are softened.
- Add the cooked white beans, vegetable broth, thyme, rosemary, and black pepper. Bring to a boil.
- Reduce heat and let simmer for 20 minutes.
- In the last 5 minutes of cooking, add the chopped kale and stir until wilted.
- Serve hot and enjoy your stew!
Notes
- For added richness, you can stir in a splash of coconut milk before serving.
