Ingredients

  • 2 cups cooked white beans
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 4 cups vegetable broth
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1/2 teaspoon black pepper
  • 2 cups kale, chopped

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Stir in the minced garlic and sliced mushrooms, cooking until the mushrooms are softened.
  4. Add the cooked white beans, vegetable broth, thyme, rosemary, and black pepper. Bring to a boil.
  5. Reduce heat and let simmer for 20 minutes.
  6. In the last 5 minutes of cooking, add the chopped kale and stir until wilted.
  7. Serve hot and enjoy your stew!
