Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell peppers, diced
  • 1 cup chickpeas, drained and rinsed
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, cook quinoa in vegetable broth according to package instructions.
  3. In a large bowl, combine cherry tomatoes, cucumber, bell peppers, and chickpeas.
  4. In a small bowl, whisk together olive oil, lemon juice, garlic powder, salt, and pepper.
  5. Once quinoa is cooked, fluff with a fork and add to the vegetable mixture.
  6. Drizzle dressing over the salad and toss to combine.
  7. Serve immediately or chill in the refrigerator for later.
