Instructions

  1. Cook quinoa in vegetable broth according to package instructions.
  2. Meanwhile, prepare the cabbage by boiling it until leaves are soft.
  3. In a bowl, mix cooked quinoa, black beans, corn, diced tomatoes, cumin, paprika, salt, and pepper.
  4. Fill each cabbage leaf with the mixture and roll tightly.
  5. Place rolls in a baking dish and drizzle with olive oil.
  6. Bake in a preheated oven at 375°F for 30 minutes.
