- 1 head cabbage
- 1 cup quinoa
- 2 cups vegetable broth
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon paprika

- pepper to taste
- 2 tablespoons olive oil
Instructions
- Cook quinoa in vegetable broth according to package instructions.
- Meanwhile, prepare the cabbage by boiling it until leaves are soft.
- In a bowl, mix cooked quinoa, black beans, corn, diced tomatoes, cumin, paprika, salt, and pepper.
- Fill each cabbage leaf with the mixture and roll tightly.
- Place rolls in a baking dish and drizzle with olive oil.
- Bake in a preheated oven at 375°F for 30 minutes.
Notes
- For added flavor, top with marinara sauce before baking.
- Can be served with a side salad for a complete meal.
