- 2 cups quinoa

Instructions
- Rinse the quinoa under cold water.
- In a saucepan, heat the olive oil over medium heat.
- Add the quinoa and toast for 2-3 minutes.
- Pour in the vegetable broth and add the salt and pepper.
- Bring to a boil, then reduce the heat and simmer for 15 minutes.
- Remove from heat and let it sit covered for 5 minutes.
- Fluff the quinoa with a fork and stir in the cherry tomatoes, spinach, and avocado.
- Serve warm or at room temperature.
