- 200g pasta of choice
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh basil leaves for garnish
- Grated Parmesan cheese (optional)
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic and cook for another minute until fragrant.
- Add the sliced bell pepper and zucchini to the skillet and cook until they start to soften.
- Stir in the cherry tomatoes and dried oregano, and season with salt and pepper to taste.
- Cook the vegetables until they are tender and the tomatoes have released their juices.
- Add the cooked pasta to the skillet and toss to combine with the vegetables.
- Serve the pasta hot, garnished with fresh basil leaves and grated Parmesan cheese if desired.
