- 2 large zucchinis
- 1 cup ricotta cheese
- 1/2 cup spinach, chopped
- 1/4 cup nutritional yeast
- 1 tsp garlic powder
- 1 tsp dried basil
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups marinara sauce
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the zucchinis lengthwise into thin strips.
- In a bowl, mix the ricotta cheese, chopped spinach, nutritional yeast, garlic powder, basil, salt, and pepper.
- Spread a thin layer of marinara sauce on the bottom of a baking dish.
- Place a spoonful of the ricotta mixture on one end of each zucchini strip, roll it up, and place it seam-side down in the baking dish.
- Once all rolls are in the dish, cover with the remaining marinara sauce.
- Bake for 25-30 minutes until heated through.
Notes
- Feel free to add other vegetables to the filling.
- For a creamy sauce, consider adding some cashew cream on top before baking.
