Ingredients

  • 2 large zucchinis
  • 1 cup ricotta cheese
  • 1/2 cup spinach, chopped
  • 1/4 cup nutritional yeast
  • 1 tsp garlic powder
  • 1 tsp dried basil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups marinara sauce

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchinis lengthwise into thin strips.
  3. In a bowl, mix the ricotta cheese, chopped spinach, nutritional yeast, garlic powder, basil, salt, and pepper.
  4. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  5. Place a spoonful of the ricotta mixture on one end of each zucchini strip, roll it up, and place it seam-side down in the baking dish.
  6. Once all rolls are in the dish, cover with the remaining marinara sauce.
  7. Bake for 25-30 minutes until heated through.

Notes

  • Feel free to add other vegetables to the filling.
  • For a creamy sauce, consider adding some cashew cream on top before baking.
