- 12 ounces pasta of your choice
- 1 cup sun dried tomatoes, chopped
- 1 cup coconut cream
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried basil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups spinach, fresh
- 1/4 cup nutritional yeast
Instructions
- Cook the pasta according to package instructions until al dente.
- In a large skillet, heat olive oil over medium heat and sauté garlic until fragrant.
- Add chopped sun dried tomatoes and cook for a few minutes.
- Pour in coconut cream and stir well to combine.
- Add dried basil, salt, and pepper, and let simmer for 5 minutes.
- Stir in the fresh spinach until wilted.
- Toss the drained pasta with the creamy sauce and mix well.
- Sprinkle nutritional yeast over the top before serving.
