  • 2 cups spinach, fresh
  • 1/4 cup nutritional yeast

Instructions

  1. Cook the pasta according to package instructions until al dente.
  2. In a large skillet, heat olive oil over medium heat and sauté garlic until fragrant.
  3. Add chopped sun dried tomatoes and cook for a few minutes.
  4. Pour in coconut cream and stir well to combine.
  5. Add dried basil, salt, and pepper, and let simmer for 5 minutes.
  6. Stir in the fresh spinach until wilted.
  7. Toss the drained pasta with the creamy sauce and mix well.
  8. Sprinkle nutritional yeast over the top before serving.
