- 8 ounces pasta of choice
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 6 cups fresh spinach
- 1 cup cashew cream
- 1 tablespoon nutritional yeast
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat and sauté garlic until fragrant.
- Add fresh spinach and sauté until wilted.
- Stir in cashew cream and nutritional yeast; mix well.
- Add cooked pasta to the skillet; toss to combine and season with salt and pepper.
- Serve warm and enjoy!
