- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, finely chopped
- 1/2 cup Greek yogurt
- 2 tablespoons fresh dill, chopped
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- Salt to taste
- Black pepper to taste
Instructions
- In a large bowl, combine the chickpeas, cucumber, cherry tomatoes, and red onion.
- In a separate bowl, whisk together the Greek yogurt, dill, garlic, lemon juice, salt, and pepper.
- Pour the tzatziki dressing over the salad ingredients and toss gently to coat.
- Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
