This Twice Baked Potato Casserole is a rich and creamy dish, perfect for any comfort food craving.

- 4 large russet potatoes
- 8 ounces turkey bacon
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup chopped green onions
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork, then bake for about 45 minutes until soft.
- While the potatoes are baking, cook the turkey bacon in a skillet until crispy. Once cooked, chop it into small pieces.
- Once the potatoes are done, let them cool slightly, then scoop out the insides into a mixing bowl.
- Add sour cream, cheddar cheese, green onions, garlic powder, salt, black pepper, and bacon to the potato mixture, mix well.
- Place the potato mixture back into the potato skins or into a baking dish.
- Top with additional cheese and bake for another 15-20 minutes until golden and bubbly.
Notes
- For extra creaminess, you can add cream cheese to the mixture.
- Feel free to substitute regular bacon if turkey bacon isn’t available.
