This Twice Baked Potato Casserole is a rich and creamy dish, perfect for any comfort food craving.


Ingredients

  • 4 large russet potatoes
  • 8 ounces turkey bacon
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped green onions
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork, then bake for about 45 minutes until soft.
  3. While the potatoes are baking, cook the turkey bacon in a skillet until crispy. Once cooked, chop it into small pieces.
  4. Once the potatoes are done, let them cool slightly, then scoop out the insides into a mixing bowl.
  5. Add sour cream, cheddar cheese, green onions, garlic powder, salt, black pepper, and bacon to the potato mixture, mix well.
  6. Place the potato mixture back into the potato skins or into a baking dish.
  7. Top with additional cheese and bake for another 15-20 minutes until golden and bubbly.

Notes

  • For extra creaminess, you can add cream cheese to the mixture.
  • Feel free to substitute regular bacon if turkey bacon isn’t available.
