- 4 slices turkey bacon
- 1 cup chopped spinach
- 1/2 cup diced bell peppers
- 1/4 cup chopped onions
- 4 large eggs
- 1/4 cup milk
- Salt to taste
- Pepper to taste
Instructions
- In a skillet, cook the turkey bacon until crispy, then remove from pan and chop.
- In the same skillet, sauté chopped spinach, bell peppers, and onions until soft.
- In a bowl, whisk together the eggs, milk, salt, and pepper.
- Add the sautéed vegetables and chopped turkey bacon to the egg mixture.
- Pour the mixture into a greased baking dish.
- Cover and refrigerate overnight.
- The next morning, preheat the oven to 350°F and bake for 25-30 minutes until set.
