- 2 cups cooked chicken, shredded
- 1/2 cup peanut butter
- 1/4 cup soy sauce
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, grated
- 4 large lettuce leaves
- 1 carrot, julienned
- 1/2 cucumber, julienned
- 1/4 cup chopped peanuts
Instructions
- In a bowl, mix peanut butter, soy sauce, honey, rice vinegar, garlic, and ginger until smooth.
- Lay out the lettuce leaves and spread some peanut sauce on each.
- Add shredded chicken, carrot, cucumber, and chopped peanuts on top.
- Wrap the lettuce leaves tightly around the filling.
- Serve with additional peanut sauce on the side.
Notes
- For extra crunch, consider adding bell peppers or sprouts.
- These wraps can be made in advance and stored in the fridge.
