- 2 cups cooked chicken, shredded
- 1 cup corn kernels, fresh or frozen
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/2 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper, to taste
Instructions
- In a large bowl, combine the cooked chicken, corn, cherry tomatoes, avocado, red onion, and cilantro.
- In a small bowl, mix lime juice, chili powder, cumin, salt, and pepper.
- Pour the dressing over the chicken and vegetable mixture and toss to combine.
- Serve immediately, or chill in the fridge for 30 minutes prior to serving for enhanced flavors.
Notes
- Feel free to add more veggies like bell peppers or cucumbers for extra crunch.
- This dish can be served on its own or over rice for a more filling meal.
