Ingredients

- 2 large sweet potatoes
- 4 slices turkey bacon
- 1 cup coconut milk
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tablespoon curry powder
- 1 teaspoon ground ginger
- 2 cups vegetable broth
- 1 tablespoon olive oil
- salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent.
- Stir in minced garlic and cook for another minute.
- Add the turkey bacon and cook until crispy.
- Mix in curry powder and ground ginger, then add diced sweet potatoes and vegetable broth.
- Bring to a boil, then reduce heat and simmer until sweet potatoes are tender.
- Stir in coconut milk and let it heat through.
- Season with salt and pepper as desired.
- Serve warm.
Notes
- This dish can be made vegan by omitting the turkey bacon.
- Serve with rice or quinoa for a complete meal.
