Ingredients

  • 2 large sweet potatoes
  • 4 slices turkey bacon
  • 1 cup coconut milk
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground ginger
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent.
  2. Stir in minced garlic and cook for another minute.
  3. Add the turkey bacon and cook until crispy.
  4. Mix in curry powder and ground ginger, then add diced sweet potatoes and vegetable broth.
  5. Bring to a boil, then reduce heat and simmer until sweet potatoes are tender.
  6. Stir in coconut milk and let it heat through.
  7. Season with salt and pepper as desired.
  8. Serve warm.

Notes
