- 2 large sweet potatoes
- 4 slices turkey bacon
- 1 cup chicken ham, diced
- 1 tablespoon olive oil
- 1 teaspoon paprika
- Salt to taste
- Black pepper to taste
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and dice the sweet potatoes into uniform cubes.
- In a bowl, combine the sweet potatoes, olive oil, paprika, salt, and pepper.
- Spread the sweet potato mixture on a baking sheet and bake for 25-30 minutes.
- Meanwhile, in a skillet, cook the turkey bacon until crispy, then remove and crumble.
- In the same skillet, sauté the diced chicken ham until heated through.
- Once the sweet potatoes are done, mix in the turkey bacon and chicken ham.
- Garnish with fresh parsley before serving.
Notes
- For extra flavor, add some garlic powder to the sweet potatoes before baking.
- This dish pairs well with a side salad.
