- 2 large sweet potatoes
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 red bell pepper, diced
- 1 onion, diced

- 1/4 teaspoon black pepper
- 1 cup shredded cheese (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, sauté onions and garlic until translucent.
- Add sweet potatoes, black beans, corn, bell pepper, and spices. Stir to combine and cook for about 10 minutes.
- Transfer the mixture to a baking dish and top with cheese if using.
- Bake in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender.
Notes
- This dish can be spiced up by adding jalapeños.
- To make it dairy-free, omit the cheese or use a vegan substitute.
