Delicious and easy-to-make sweet potato and black bean tacos, perfect for a quick weeknight dinner.

- 2 medium sweet potatoes
- 1 can (15 oz) black beans, drained and rinsed
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 8 small corn tortillas
- 1 avocado, sliced
- 1/2 cup chopped cilantro
- 1/4 cup lime juice
Instructions
- Preheat your oven to 400°F (200°C).
- Pierce the sweet potatoes with a fork and bake for 45-60 minutes until tender.
- In a skillet, heat olive oil and add black beans, cumin, and chili powder; cook until heated through.
- Warm the corn tortillas on a skillet or in the oven.
- Once the sweet potatoes are cool enough to handle, peel and mash them in a bowl.
- To assemble the tacos, spread the mashed sweet potatoes on the tortillas, add black bean mixture, avocado slices, and sprinkle with cilantro and lime juice.
Notes
- For extra flavor, add diced jalapeño or your favorite hot sauce.
- These tacos can be served with salsa or cheese if desired.
