Ingredients

  • 2 medium sweet potatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 8 small corn tortillas
  • 1 avocado, sliced
  • 1/2 cup chopped cilantro
  • 1/4 cup lime juice

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pierce the sweet potatoes with a fork and bake for 45-60 minutes until tender.
  3. In a skillet, heat olive oil and add black beans, cumin, and chili powder; cook until heated through.
  4. Warm the corn tortillas on a skillet or in the oven.
  5. Once the sweet potatoes are cool enough to handle, peel and mash them in a bowl.
  6. To assemble the tacos, spread the mashed sweet potatoes on the tortillas, add black bean mixture, avocado slices, and sprinkle with cilantro and lime juice.
