- 2 cups sweet potatoes, diced
- 1 can (15 ounces) black beans, drained and rinsed
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- ½ teaspoon salt
- 8 corn tortillas
- 1 avocado, sliced
- 1 lime, cut into wedges
- Fresh cilantro, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix the diced sweet potatoes with olive oil, cumin, chili powder, and salt.
- Spread the sweet potato mixture on a baking sheet and roast for 25-30 minutes until tender.
- In a saucepan, heat the black beans over medium heat.
- Warm the corn tortillas in a separate pan.
- Assemble the tacos by placing sweet potatoes and black beans on each tortilla.
- Add avocado slices and garnish with lime and cilantro.
Notes
- For extra flavor, add your favorite hot sauce.
- These tacos are great served with a side of rice or salad.
