  • 1 avocado, sliced
  • 1 lime, cut into wedges

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix the diced sweet potatoes with olive oil, cumin, chili powder, and salt.
  3. Spread the sweet potato mixture on a baking sheet and roast for 25-30 minutes until tender.
  4. In a saucepan, heat the black beans over medium heat.
  5. Warm the corn tortillas in a separate pan.
  6. Assemble the tacos by placing sweet potatoes and black beans on each tortilla.
  7. Add avocado slices and garnish with lime and cilantro.
