Instructions
- In a saucepan, combine sugar, corn syrup, and butter over medium heat.
- Stir until the sugar dissolves and the mixture comes to a boil.
- Add heavy cream and pomegranate juice carefully. Stir continuously.
- Once the mixture reaches 240°F on a candy thermometer, remove from heat.
- Stir in dried cranberries and salt.
- Pour the mixture into a greased baking dish and let it cool.
- Once set, cut into pieces and wrap in parchment paper.
