- 1 pound chicken breast, cubed
- 1 cup bell pepper, chopped
- 1 cup pineapple chunks
- 1/2 cup onion, chopped
- 1/2 cup sweet and sour sauce
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
Instructions
- In a large skillet, heat vegetable oil over medium heat.
- Add chicken breast and cook until browned.
- Add onion, bell pepper, and pineapple, and stir-fry for about 5 minutes.
- In a bowl, mix sweet and sour sauce with soy sauce and cornstarch.
- Pour sauce over the chicken mixture and stir well.
- Cook for another 5-7 minutes until the sauce thickens.
- Serve hot over rice.
Notes
- For extra flavor, marinate the chicken for an hour before cooking.
- This dish can be made with shrimp or tofu as a substitute.
