- 4 bell peppers
- 1 pound ground beef
- 1 cup cooked rice
- 1 can (15 ounces) diced tomatoes
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup shredded cheese
Instructions
- Preheat your oven to 375°F.
- Cut the tops off the bell peppers and remove the seeds.
- In a skillet, cook the ground beef until browned, then drain.
- Add cooked rice, diced tomatoes, garlic powder, onion powder, Italian seasoning, salt, and pepper to the beef. Mix well.
- Stuff each bell pepper with the beef mixture and place in a baking dish.
- Cover with foil and bake for 30 minutes.
- Remove foil, sprinkle cheese on top, and bake for an additional 10 minutes until the cheese is melted.
- Let cool slightly before serving.
Notes
- For extra flavor, add some chopped onions or bell pepper tops to the beef mixture.
- Feel free to substitute ground turkey or chicken for the beef.
