- 1 pound ground beef

Instructions
- Preheat the oven to 350°F.
- Cut the tops off the bell peppers and remove the seeds.
- In a skillet, cook the ground beef until browned.
- Add the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper to the beef, and stir well.
- Stuff the mixture into the prepared peppers and place them in a baking dish.
- Cover with foil and bake for 30 minutes.
- Remove foil, sprinkle cheese on top of each pepper, and bake for an additional 10 minutes until cheese is melted.
