- 1 lb ground beef
- 1 cup fresh spinach, chopped
- 2 cloves garlic, minced
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1 tsp salt
- 1/2 tsp black pepper
- 4 oz mozzarella cheese, cut into small cubes
- 2 tbsp olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine ground beef, chopped spinach, minced garlic, breadcrumbs, Parmesan cheese, egg, salt, and pepper. Mix well until all ingredients are evenly incorporated.
- Take a small amount of the meat mixture and flatten it in your hand. Place a cube of mozzarella cheese in the center and wrap the meat around it, forming a ball. Repeat with the remaining mixture and cheese.
- Heat olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 5 minutes.
- Transfer the browned meatballs to a baking dish and bake in the preheated oven for 15-20 minutes, or until cooked through.
- Remove from the oven and let cool slightly before serving.
Notes
- For a spicier version, add a pinch of red pepper flakes to the meat mixture.
- These meatballs can be served with pasta or on their own as an appetizer.
- Leftovers can be stored in the refrigerator for up to 3 days.
