- 8 ounces rotini pasta
- 2 cups fresh spinach, chopped
- 1 can (14 ounces) artichoke hearts, drained and chopped
- 1/2 cup cherry tomatoes, halved
- 1/3 cup feta cheese, crumbled
- 1/4 cup red onion, diced
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon garlic powder
- salt and pepper to taste
Instructions
- Cook the rotini pasta according to package instructions. Drain and rinse under cold water.
- In a large bowl, combine the cooked pasta, spinach, artichoke hearts, cherry tomatoes, feta cheese, and red onion.
- In a separate bowl, whisk together the olive oil, lemon juice, garlic powder, salt, and pepper.
- Pour the dressing over the pasta salad and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.

- This salad can be made ahead of time and stored in the fridge.
- Feel free to add grilled chicken or shrimp for extra protein.
