- 2 medium eggplants
- 3 tablespoons miso paste
- 2 tablespoons tahini
- 1 tablespoon sesame oil
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon chili paste
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 2 tablespoons green onions, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- Slice the eggplants in half lengthwise and score the flesh.
- Brush with sesame oil and roast for 25-30 minutes until tender.
- In a bowl, mix miso, tahini, soy sauce, rice vinegar, chili paste, garlic, and ginger.
- Spread the miso mixture over the roasted eggplant.
- Return to the oven for an additional 10 minutes.
- Garnish with green onions before serving.

- Adjust the spiciness by adding more or less chili paste.
