Ingredients

  • 2 medium eggplants
  • 3 tablespoons miso paste
  • 2 tablespoons tahini
  • 1 tablespoon sesame oil
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon chili paste
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 tablespoons green onions, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the eggplants in half lengthwise and score the flesh.
  3. Brush with sesame oil and roast for 25-30 minutes until tender.
  4. In a bowl, mix miso, tahini, soy sauce, rice vinegar, chili paste, garlic, and ginger.
  5. Spread the miso mixture over the roasted eggplant.
  6. Return to the oven for an additional 10 minutes.
  7. Garnish with green onions before serving.
