Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
- In a bowl, combine the flour, baking powder, baking soda, cinnamon, and nutmeg.
- In another bowl, whisk together the pumpkin puree, eggs, brown sugar, vegetable oil, and vanilla.
- Mix the wet ingredients into the dry ingredients until just combined, then fold in the diced apples.
- Distribute the batter evenly among the muffin cups.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Let cool before serving.
