- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 cup pumpkin puree
- 1/2 cup diced apple
- 1/4 cup sugar
- 1 egg
- 1/4 cup milk
- 2 tablespoons melted butter
- 1/4 cup streusel topping
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a mixing bowl, combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, whisk together pumpkin puree, diced apple, sugar, egg, milk, and melted butter.
- Mix the wet ingredients into the dry ingredients until just combined.
- Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Top each muffin with streusel topping.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Let cool for a few minutes before transferring to a wire rack.
Notes
- For an extra touch, add some chopped nuts to the batter.
- These muffins freeze well, so you can enjoy them later!
