Description

Ingredients

  • 3 pounds beef chuck roast
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 chipotle peppers in adobo sauce
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 4 cups beef broth
  • 2 cups diced tomatoes
  • 1 tablespoon lime juice

Instructions

  1. Season the beef with salt and black pepper.
  2. In a skillet, heat the vegetable oil over medium-high heat. Sear the beef on all sides until browned.
  3. Transfer the beef to the slow cooker and add onion, garlic, chipotle peppers, cumin, oregano, beef broth, diced tomatoes, and lime juice.
  4. Cover and cook on low for 6-8 hours until the beef is tender.
  5. Once cooked, shred the beef with two forks and mix it back into the sauce.
  6. Serve hot, garnished with fresh cilantro and lime wedges.

Notes

  • For more heat, add additional chipotle peppers.
  • This birria is great for tacos or served with rice.
