- 3 pounds beef chuck roast
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 chipotle peppers in adobo sauce
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano
- 4 cups beef broth
- 2 cups diced tomatoes
- 1 tablespoon lime juice
Instructions
- Season the beef with salt and black pepper.
- In a skillet, heat the vegetable oil over medium-high heat. Sear the beef on all sides until browned.
- Transfer the beef to the slow cooker and add onion, garlic, chipotle peppers, cumin, oregano, beef broth, diced tomatoes, and lime juice.
- Cover and cook on low for 6-8 hours until the beef is tender.
- Once cooked, shred the beef with two forks and mix it back into the sauce.
- Serve hot, garnished with fresh cilantro and lime wedges.
Notes
- For more heat, add additional chipotle peppers.
- This birria is great for tacos or served with rice.
