- 1 pound chicken thighs
- 1 cup peanut butter
- 1/4 cup soy sauce
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1/4 cup honey
- 1 cup chicken broth
- 1 tablespoon lime juice
Instructions
- In a slow cooker, combine the chicken thighs, peanut butter, soy sauce, garlic, ginger, honey, chicken broth, and lime juice.
- Stir everything together until the chicken is well coated.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, shred the chicken with two forks and mix it back into the sauce.
- Serve over rice or with vegetables.
Notes
- For a spicier dish, add a teaspoon of red pepper flakes.
- This recipe can be made ahead of time and reheated.
