- 2 cups orzo pasta
- 1 pound boneless, skinless chicken breasts
- 1 cup diced tomatoes
- 1 cup heavy cream
- 1 cup spinach, fresh
- 1/2 cup parmesan cheese, grated
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- In the slow cooker, add the chicken breasts, diced tomatoes, garlic, Italian seasoning, salt, and pepper.
- Cover and cook on low for 6 hours.
- Once cooked, shred the chicken with two forks.
- Add the orzo, heavy cream, spinach, and parmesan cheese. Stir to combine.
- Cover and cook on low for an additional 30 minutes.
- Serve warm.

- For added flavor, consider adding sun-dried tomatoes or artichokes.
