- 2 pounds boneless, skinless chicken thighs
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon smoked paprika
- 1 teaspoon turmeric
- 1 teaspoon ground cinnamon
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon lemon juice
- 1/2 cup water
- pita bread for serving
- tahini sauce for serving
- fresh vegetables for serving
Instructions
- In a bowl, mix together olive oil, garlic, spices, salt, black pepper, lemon juice, and water to form a marinade.
- Add the chicken thighs to the marinade and ensure they are well coated.
- Place the chicken in the slow cooker and pour any remaining marinade over it.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is tender.
- Once cooked, shred the chicken with two forks and mix it in the sauce.
- Serve with pita bread, tahini sauce, and fresh vegetables.
Notes
- For a spicier kick, add cayenne pepper to the marinade.
- Let the chicken marinate for several hours or overnight for more flavor.
