- 2 pounds chicken thighs
- 1 cup diced onion
- 4 cloves garlic, minced
- 1 tablespoon grated ginger
- 2 tablespoons garam masala
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 can (15 oz) tomato sauce
- 1 cup coconut milk
- 2 tablespoons unsalted butter
- salt to taste
- 1/4 cup fresh cilantro, chopped
Instructions
- Place the chicken thighs in the slow cooker.
- In a bowl, mix together the onion, garlic, ginger, spices, tomato sauce, and coconut milk.
- Pour the mixture over the chicken.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Stir in the butter at the end of cooking.
- Garnish with cilantro before serving.

- Add more spices for a spicier version.
- Serve with rice or naan for best results.
