Ingredients

  • 1 can (15 oz) tomato sauce
  • 1 cup coconut milk
  • 2 tablespoons unsalted butter
  • salt to taste
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Place the chicken thighs in the slow cooker.
  2. In a bowl, mix together the onion, garlic, ginger, spices, tomato sauce, and coconut milk.
  3. Pour the mixture over the chicken.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Stir in the butter at the end of cooking.
  6. Garnish with cilantro before serving.
