- 1 pound baby potatoes

- 1 teaspoon paprika

- 1 tablespoon fresh herbs (like rosemary or thyme)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the olive oil, garlic powder, paprika, salt, and pepper. Toss the pork chops in the mixture.
- Cut the baby potatoes in half and add them to the bowl, coating them in the seasoning.
- Arrange the pork chops and potatoes on a sheet pan.
- Bake for 25-30 minutes, or until the pork chops reach an internal temperature of 145°F (63°C) and the potatoes are tender.
- Remove from oven and let rest for a few minutes before serving.
Notes
- For extra flavor, marinate the pork chops for a few hours before cooking.
- Feel free to add other vegetables like carrots or Brussels sprouts to the sheet pan.
