- 1/4 cup maple syrup
- 3 tablespoons Dijon mustard

- 1 pound baby carrots
- 1 pound Brussels sprouts
Instructions
- Preheat the oven to 425°F (220°C).
- In a bowl, whisk together the maple syrup, Dijon mustard, olive oil, salt, and pepper.
- Place the chicken thighs on a sheet pan and pour the maple mustard mixture over them.
- Add the carrots and Brussels sprouts to the pan, tossing them in the sauce.
- Bake for 25-30 minutes until the chicken is cooked through and vegetables are tender.
