- 1 pound chicken breast, cubed
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups bell peppers, sliced
- 1 cup red onion, sliced
- 4 pita breads
- 1/2 cup Herby Ranch dressing
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the cubed chicken, olive oil, garlic powder, onion powder, paprika, salt, and pepper. Toss until the chicken is well coated.
- Spread the chicken on a sheet pan and add the bell peppers and red onion. Bake for 20-25 minutes until the chicken is cooked through and vegetables are tender.
- Warm the pita breads in the oven for the last 5 minutes.
- Assemble the pitas by filling each with the chicken and vegetable mixture, then drizzle with Herby Ranch dressing.
Notes
- For extra flavor, marinate the chicken in the seasoning for at least 30 minutes before cooking.
- Feel free to add other vegetables such as zucchini or mushrooms.
