Ingredients

- 1 pound sausage
- 1 cup warm water
- 2 tablespoons sugar
- 1 tablespoon kosher salt
- 2 1/4 teaspoons active dry yeast
- 4 cups all-purpose flour
- 1/2 cup baking soda
- 1 egg, beaten
- 1 tablespoon coarse sea salt
Instructions
- In a bowl, combine warm water, sugar, and yeast. Let it sit for 5 minutes until frothy.
- Add flour and kosher salt, mix until a dough forms.
- Knead the dough on a floured surface for 5 minutes. Let it rise for 1 hour.
- Preheat the oven to 450°F (232°C).
- Roll the dough into small pieces and wrap them around the sausage.
- Boil water with baking soda, then dip each pretzel bite for 30 seconds.
- Place on a baking sheet, brush with egg, and sprinkle with coarse salt.
- Bake for 12-15 minutes until golden brown.
