- 1 eggplant, diced
- 4 tomatoes, diced
- 4 cups vegetable broth

- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic; sauté until translucent.
- Add bell pepper, zucchini, and eggplant; cook for about 5 minutes.
- Add the tomatoes, vegetable broth, basil, oregano, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer for 30 minutes.
