  • 1 fresh pineapple, peeled and cored
  • 1 cup dark rum
  • 1 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup flour
  • 2 large eggs
  • 1 cup breadcrumbs
  • 1/4 cup oil for frying

Instructions

  1. Slice the pineapple into rings or wedges.
  2. In a bowl, combine rum, brown sugar, cinnamon, and nutmeg. Marinate the pineapple in this mixture for at least 30 minutes.
  3. Set up a breading station with flour, beaten eggs, and breadcrumbs.
  4. Dip each pineapple piece in flour, then eggs, and finally coat with breadcrumbs.
  5. Heat oil in a frying pan over medium heat.
  6. Fry the breaded pineapple pieces until golden brown, about 2-3 minutes on each side.
  7. Remove from oil and drain on paper towels.
  8. Serve warm, optionally drizzled with additional rum sauce.

Notes

  • For extra caramelization, you can drizzle honey on the fried pineapple just before serving.
