- 1 fresh pineapple, peeled and cored
- 1 cup dark rum
- 1 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- 1 cup flour
- 2 large eggs
- 1 cup breadcrumbs
- 1/4 cup oil for frying
Instructions
- Slice the pineapple into rings or wedges.
- In a bowl, combine rum, brown sugar, cinnamon, and nutmeg. Marinate the pineapple in this mixture for at least 30 minutes.
- Set up a breading station with flour, beaten eggs, and breadcrumbs.
- Dip each pineapple piece in flour, then eggs, and finally coat with breadcrumbs.
- Heat oil in a frying pan over medium heat.
- Fry the breaded pineapple pieces until golden brown, about 2-3 minutes on each side.
- Remove from oil and drain on paper towels.
- Serve warm, optionally drizzled with additional rum sauce.
Notes
- For extra caramelization, you can drizzle honey on the fried pineapple just before serving.
