A warm and hearty roasted veggie soup perfect for a cozy meal.
Ingredients

- 2 cups chopped carrots
- 1 cup chopped celery
- 1 cup diced potatoes
- 1 cup chopped bell peppers
- 4 cups vegetable broth
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss all the veggies with olive oil, salt, pepper, thyme, and garlic powder.
- Spread the veggies on a baking sheet and roast for 25-30 minutes.
- In a large pot, combine roasted veggies with vegetable broth and bring to a simmer.
- Using an immersion blender, blend soup until desired consistency is reached.
- Serve warm and enjoy!

- This soup can be made ahead of time and tastes even better the next day.
