Ingredients

  • 2 cups chopped carrots
  • 1 cup chopped celery
  • 1 cup diced potatoes
  • 1 cup chopped bell peppers
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss all the veggies with olive oil, salt, pepper, thyme, and garlic powder.
  3. Spread the veggies on a baking sheet and roast for 25-30 minutes.
  4. In a large pot, combine roasted veggies with vegetable broth and bring to a simmer.
  5. Using an immersion blender, blend soup until desired consistency is reached.
  6. Serve warm and enjoy!
