Ingredients

  • 2 pounds ripe tomatoes
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon sugar
  • 1 tablespoon fresh basil, chopped

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice the tomatoes in half and place them on a baking sheet.
  3. Drizzle with olive oil and roast for about 25-30 minutes.
  4. In a large pot, heat olive oil over medium heat and add the chopped onion and garlic.
  5. Sauté until translucent, about 5 minutes.
  6. Add the roasted tomatoes, vegetable broth, salt, black pepper, and sugar.
  7. Bring to a boil, then reduce heat and simmer for 15 minutes.
  8. Use an immersion blender to blend the soup until smooth.
  9. Stir in fresh basil and serve warm.
