Ingredients

- 2 pounds ripe tomatoes
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon sugar
- 1 tablespoon fresh basil, chopped
Instructions
- Preheat your oven to 425°F (220°C).
- Slice the tomatoes in half and place them on a baking sheet.
- Drizzle with olive oil and roast for about 25-30 minutes.
- In a large pot, heat olive oil over medium heat and add the chopped onion and garlic.
- Sauté until translucent, about 5 minutes.
- Add the roasted tomatoes, vegetable broth, salt, black pepper, and sugar.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Use an immersion blender to blend the soup until smooth.
- Stir in fresh basil and serve warm.
Notes
- Adjust seasoning to taste before serving.
- Can be topped with croutons or a splash of cream for extra flavor.
