Ingredients

- 2 pounds ripe tomatoes
- 1 medium onion, diced
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 cup vegetable broth
- 1 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried basil
Instructions
- Preheat your oven to 400°F (200°C).
- Place the tomatoes, onion, and garlic on a baking sheet and drizzle with olive oil. Season with salt and pepper.
- Roast in the oven for 25-30 minutes, or until the tomatoes are blistered and soft.
- Transfer the roasted mixture to a blender, add vegetable broth, and blend until smooth.
- Pour the mixture into a pot, add heavy cream and dried basil, and simmer for 10 minutes.
- Serve hot, garnished with fresh herbs if desired.
Notes
- For extra flavor, add a splash of balsamic vinegar before blending.
- Garnish with croutons for added texture.
