- 1 can (14 oz) coconut milk
- 1 cup diced tomatoes
- 1 teaspoon salt

Instructions
- Rinse the lentils under cold water and set aside.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent.
- Add the minced garlic, cumin, and paprika. Cook for an additional minute until fragrant.
- Add the lentils and vegetable broth to the pot. Bring to a boil, then reduce to a simmer.
- Cover and cook for about 20 minutes or until the lentils are tender.
- Stir in the coconut milk and diced tomatoes. Season with salt and pepper.
- Simmer for another 5-10 minutes until heated through.
