Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix the flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, cream the butter and sugar until light and fluffy.
- Add in the egg, food coloring, and vanilla extract, then mix well.
- Gradually add the dry ingredients to the wet mixture until well combined.
- Drop spoonfuls of dough onto the prepared baking sheet.
- Bake for 10-12 minutes or until edges are set.
- Allow cooling on a wire rack.
- To make the filling, mix the cream cheese and powdered sugar until smooth, then sandwich between two cookies.
Notes
- For a richer flavor, let the cookies cool completely before adding the filling.
- Adjust the amount of food coloring for a deeper red.
