- 2 carrots, diced
- 2 celery stalks, diced

- 4 cups vegetable broth

- 1 teaspoon paprika
- 1 teaspoon salt
Instructions
- Preheat the oven to 375°F (190°C).
- Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery. Sauté until softened.
- Add garlic, cumin, and paprika, and cook for an additional minute.
- Stir in the lentils and rice, followed by the vegetable broth. Bring to a boil.
- Transfer the mixture to a casserole dish and cover with foil.
- Bake for 30-40 minutes until the lentils and rice are tender.
