Instructions
- In a mixing bowl, whisk together flour, eggs, milk, sugar, and vanilla until smooth.
- Heat a non-stick skillet over medium heat and add melted butter.
- Pour a thin layer of batter into the skillet, cooking until the edges start to lift, then flip.
- Repeat with remaining batter.
- Spread a spoonful of whipped cream on each crepe, top with raspberries, and roll.
- Serve immediately with extra raspberries and cream on top.
Notes
- For a richer flavor, add a bit of lemon zest to the batter.
- These crepes can be prepared in advance and reheated quickly.
