Ingredients

  • 1 cup fresh raspberries
  • 1 package ladyfinger cookies
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup espresso or strong coffee
  • 2 tablespoons cocoa powder

Instructions

  1. In a mixing bowl, whip the heavy cream with sugar and vanilla until stiff peaks form.
  2. Fold in the mascarpone gently until combined.
  3. Dip ladyfingers in the espresso and layer them in a serving dish.
  4. Spread half of the mascarpone mixture over the ladyfingers.
  5. Add half of the raspberries over the mascarpone layer.
  6. Repeat the layers with remaining ingredients.
  7. Dust the top with cocoa powder and refrigerate for at least 4 hours before serving.
