Ingredients

- 1 cup quinoa
- 2 cups corn kernels
- 4 slices turkey bacon
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 cup heavy cream
Instructions
- In a large pot, cook the turkey bacon until crispy. Remove and chop into pieces.
- In the same pot, sauté onion and garlic until translucent.
- Add quinoa, corn, and broth to the pot; bring to a boil.
- Reduce heat and simmer for 20 minutes, until quinoa is cooked.
- Stir in heavy cream, paprika, black pepper, salt, and the chopped turkey bacon. Cook for an additional 5 minutes.
- Serve hot with a sprinkle of fresh herbs if desired.
Notes
- For a vegetarian version, substitute turkey bacon with smoked paprika for flavor.
- This chowder can be thickened by adding more quinoa.
